Look, some days, I am just L-A-Z-Y.

Not just a little "couch potato" lazy.

I don't feel like writing. I don't feel like blogging.


And DARE I say, I don't feel like looking at shoes.

(GASP)

Yes, admitting it IS the hardest part.

But these are the days that ignite inspiration.

No, not the inspiration of a sloth.

The inspiration to make my fiance a hearty, healthy dinner that looks like I spent hours in the kitchen-- when, in reality, I was just being lazy.


The following recipe comes from one of those days. We all have them, and this is the lunch or dinner to make. It's delicious.

**

  • 4-6 cups of Chicken broth - I am IN LOVE with "Better Than Bouillon" Vegetarian Chicken Broth
  • Minced garlic (a tablespoon, more or less)
  • Salt and Pepper (a dash)
  • 1 cup Whole Wheat noodles (I like the twisty kind)
  • 2 Eggs (scrambled)
  • Handful of Arugula


Boil broth in a pot. Toss in a bit of garlic and pepper. Add pasta and cook through. They usually take 5-12 minutes.

Lower the heat.

In a separate bowl, crack eggs and beat them. Toss a little salt and pepper into the mix.

Then, slowly pour the egg mix into the pot and stir in with fork.

Add the washed arugula and let it wilt down, for a minute or two.

How to Plate: Spoon into a large soup bowl. Who needs style when you’re lazy?

HIP TIP - APPLE CIDER VINEGAR

Apple Cider Vinegar.

You can mix it with some olive oil to make a nice vinaigrette, but those three words (that just don't seem like they should go together) can actually change your life.

Hippocrates supposedly used it as a health tonic and American soldiers are said to use it to combat indigestion, pneumonia and scurvy.

It helps lower glucose levels in diabetes patients, and ACV is most widely known to help break down fat and lower glycemic levels while ingesting carbohydrates.


It can also cure DANDRUFF! Here is the recipe:

  • Apple Cider Vinegar
  • Water

Mix 1 part ACV with 1 part water and pour into a spray or squirt bottle. Wet your hair with water, pat down, then spray themixture all over your scalp.

Allow to sit on your head for about 40 minutes, wash out, shampoo as normal.

A TRIBUTE - "DOM'S MOM'S MEATBALLS"

"DOM'S MOM'S MEATBALLS"
  • 2 pounds ground chuck
  • 1/2 pound of ground pork
  • 2 cups Italian bread crumbs
  • 4 eggs
  • 1 cup milk
  • 1 cup fresh parsley chopped
  • 1 cup grated cheese parmesan
  • 1 tablespoon olive oil
  • 2 garlic cloves chopped very fine
  • 1 onion minced
  • 1/2 cup pine nuts (optional)
**

Place all ingredients in a large bowl and mix throughly. Let stand 1/2 hour. Shape into medium-size meatballs.

Fry gently in olive oil until lightly browned, or place on foil on a cookie sheet and bake for 1/2 hour at 35o degrees.

Gently place in your own hot spagetti sauce and cook on medium-low heat for 1 hour.

DON'T BE A DRUNK CHICKEN

I understand-- work is stressful. Life is stressful. And every-so-often we need to unwind and relax.

Sometimes a few glasses of red wine will do the trick. But on other occasions, you need to go with the strong stuff.

Here's my Tequila Chicken recipe (that will go great with a Grapefruit Marga-tini!)

While the tequila in this dish is purely for flavor, don't get too sloshed-- it's not very lady-like.
**

  • 1/2 cup of tequila
  • juice of 1/2 a lime
  • 1/4 cup of orange juice
  • chili powder (a dash)
  • 1 lb of chicken (thin cutlets)

In a medium pyrex dish, mix the tequila, lime juice, and orange juice with a dash of salt, pepper and chili powder. Soak your chicken for atleast an hour (up to 24 hrs) covered in the fridge.

When ready to cook, heat your pan on the stove top and spray with cooking oil. Cook your chicken evenly, about three minutes each side (depending on the thickness of the chicken).

When the chicken is almost done, add a bit of the tequila marinade to the pan.

How to Plate: Looks chic over rice and beans!

DRESS UP YOUR VEGGIES

Sometimes, you get restless with the monotony of daily life.

Don't deny it. We all do.

To curb this feeling, I need to get dressed up and dolled up and have a night on the town.

I deserve it! You do too.

But when I don't have the dough to go out (or the excuse to be taken out) ... I have to dress up my meal.

Get rid of those BLAND veggies you are serving with your main dish-- and make this!

**

  • 2 zucchinis, sliced
  • 1 shallot, sliced
  • salt and pepper (to taste)
  • Parmesan cheese
Spray your pan with olive or canola and set on medium heat. Toss in your shallots and cook, mixing often, until golden.

Toss in your diced zucchini until you get some nice char marks. Spray a little more oil if necessary.

Sprinkle some salt and pepper to taste. Then, add your Parmesan.

Toss and serve immediately.

THAI ME UP

Left-over Thai food is the best. It can't be beat.

But did you know that curry really isn't that hard to make on your own.

Give it a try!

**

  • 1-2 lbs of raw thinly sliced chicken (cutlets preferred and are easiest to cut)
  • Panang Curry Paste (at your local grocery store)
  • 1 can of Coconut milk
  • Bell pepper or onion (optional)
  • Instant Brown rice (optional)
  • Salt/Pepper to taste

In a medium heat skillet, add curry paste with the coconut milk. Stir until paste is dissolved and the mixture bubbles.

Add the onions and bell pepper. Bring to a boil, then simmer until soft, for 2 minutes.

Add the sliced chicken. Bring to a boil, then reduce heat and simmer for 5 minutes, stirring occasionally.

If you are making instant rice, make it now in a separate bowl / pot.

In the skillet, stir and cook 3 minutes more or until the chicken is cooked.


See? Not that difficult!

The first (and often extremely long) day of the work week.


Here is a fabulous cocktail to enjoy at the end of your day.


You can have this shaken and strained into a martini glass OR on the rocks with some salt.


It just depends how fancy you want to feel.

  • 1/2 oz Orange Juice
  • 3 oz Tequila (of your choice)
  • 4 oz Ruby Grapefruit Juice
  • Juice of 1/2 a lime

Add all ingredients into a shaker with some ice.

Shake, strain, pour and enjoy, you sexy bitch!

One word: Amazing.

CARB-FREE LOW FAT BBQ TURKEY BURGERS

DIFFICULTY LEVEL: OY!

If I had it my way, I would go to Baby Blues BBQ every night.

But I just don't think my figure could handle that.

So, I created an alternative. I wanted a great low fat meal.

While I made this with no bun (trying to get into wedding shape!) YOU can and should have it on a whole wheat bun slathered in BBQ sauce.

**

  • 1 lb. ground turkey
  • 3/4 cup of corn (cooked, not frozen)
  • Some good ole BBQ sauce
  • Buns (optional)
In a bowl, mix the turkey with the drained, cooked corn (you can microwave the frozen stuff in water for about 3 minutes).

Add a bit of BBQ sauce to the bowl and mix well. Just don't over-do it-- the burgers will be slop if you add too much!

In a heated pan, spray with cooking oil and toss in the burgers. Cook evenly, about 5-7 minutes per side.

Enjoy!

How fabulous are these?

I was in Sephora looking for the "perfect lip plumper" to give me that perfect pout.

When I found what I was looking for, the main ingredient took me totally by surprise. I was expecting some odd-named mumbo-jumbo "propyl / acate/ pheryl."


It was CINNAMON.

Yes, that miraculous ingredient that makes coffee and apple cider so delicious.


I did some research and found out that cinnamon is "anti-microbial"-- when ingested, it helps stop the growth of bacteria. The scent of cinnamon has been proven to boost brain function.


What more could it possibly do?

How could this pantry favorite give me bee-stung lips?!

  • Cinnamon Oil
  • Vitamin E Oil (can extract from pills)
Simply:

Mix a drop (only a drop to start) of Cinnamon oil with some vitamin E oil.
Rub it onto your clean and dry lips.

It may burn at first, but that will quickly subside.


How does it work?


The cinnamon oil brings blood to the surface to create that "Angelina" look.


And FYI, it only lasts an hour or so.

HIP TIP - WHEN LIFE GIVES YOU LEMONS...

Make Lemonade.

Or... use lemons to remove dark patches around your elbows.

Apply some lemon juice to your elbow skin area and leave on for 20 minutes, then wash away.

TERIYAKI MINI MEATBALLS

Who said meatballs have to be Italian and over pasta? Here is a fabulous recipe for a main course OR appetizer! (I prefer serving as an appetizer pricked with toothpicks)

**
  • 1 lb of ground beef or turkey
  • 1/2 cup of (Soy Vey) Teriyaki sauce
  • 1 teaspoon of Crushed (jar) Ginger

Easy Peasy.

Preheat the oven to 395.

Mix a 1/2 cup sauce and the teaspoon of ginger into the ground meat. Really work it into a thorough consistency.

On a tin foiled baking tray,
roll the meat into cute little meatballs.

After 15-ish minutes, depending on your oven, take out.

How to Plate:

Be Modern- On a crisp platter, arrange in a straight line and puncture with toothpicks.

Be Cozy- In a bowl, fill with mini meatballs. On the side, display a container of toothpicks.

HIP TIP - SESAME OIL


We know it's great in any recipe, salad or fryer--

Believe it or not, you can ALSO remove Waterproof Mascara with Sesame Oil!


Dab some oil on a cotton ball and wipe gently across your eye lids.


It's gentle on your skin and gets the job done.

You know, the female version of cock blockers.
Women who block the hot guys from chatting with you on a night out on the town.

With friends like that, who needs enemies?


What will prevent these (dare I say) bitches from stepping on your toes when meeting guys?


I'm more concerned with how they could even THINK about stepping on your feet in those gorgeous pumps!


My inclination is to say they are envious of you.


The following recipe will make them even more envious! (It's also a great dish to shove in their mouths to shut them up.)

  • Head of lettuce
  • 1 lb of ground turkey
  • 1/2 yellow onion, chopped
  • Handful of carrots, chopped
  • Either olive/canola/ sesame oil
  • Soy sauce
  • Teriyaki sauce
  • Hoisin sauce

In a pre-heated pan on medium, spray your oil of choice. Cook the onions and carrots until soft and the onions are starting to brown. Take them out.

Re-spray your pan and cook your ground turkey. As it browns, break it up into small pieces with your spatula.

When the turkey is almost done, on the stove top, add equal dashes of Soy and Teriyaki sauces. Put a small teaspoon of Hoisin in there. Add the onions and carrots in and mix well. Give it a taste and add a dash of soy sauce if need-be.

Rinse your lettuce, spoon the mixture into the leaf, and enjoy!
This is a great appetizer or main dish.

This BRISKET dish is great to make as a couple-- have him prep the carrots and onions and let him slice the meat!

Having a fun experience in the kitchen makes an easy transition to having a fun experience after dinner.

* Don't be fooled-- this dish is perfect for family and friends too!

  • 4-6lbs of 1st cut brisket
  • 2 onions – diced
  • Paprika (lots)
  • 2 bay leaf
  • Pepper, salt, garlic powder
  • 1 handful of diced Carrots
  • ½ can chopped Tomato (drained)
  • 1 can tomato sauce

Olive oil your pan. Sear brisket with onions over low, making onions light brown in color, add a lot of paprika!

Move meat and onions into a large pot. Cover in 1 can tomato sauce and 1/2 can of water, chopped tomato, carrots, peppers, bay leaf, and dashes of salt and pepper. Cover pot and cook for two hours on stovetop, no mixing. After two hours, let it cool... then slice brisket and put back with the sauce (in the pot) and cook another hour and a half. Add garlic powder, pepper and salt to taste!


How to Plate: This is so delicious, it doesn’t matter how it looks!
